For me summer= allergies= sinus drainage= lap band issues. It’s simple. Lap band gets clogged and I have a hard time finding foods that not only stay down but also aren’t ice cream. Enter soup.
Before you ask; yes, I really am aware that my Midwestern brethren and I are in the middle of a drought laden heat wave. So soup sounds strange but it’s what works for me.
Cheese Soup Base
• 1 can cream of something soup (I used chicken with herbs)
• 2 cups fancy shredded cheese any kind
• 12 ounce can evaporated milk
• up to 1/2 cup milk to thin if needed
In medium sauce pan mix soup and evaporated milk over medium heat.
Whisk all lumps out before adding cheese all at once. Whisk constantly till cheese is no longer stringy.
You can leave it like this and use as fondu or add a splash of milk till its the soup consistency that you like.
To finish this batch I tossed in a handful of chopped up bacon and about a teaspoon of apple cider vinegar to wake it up. Toss a couple of croutons on each bowl and mmmmmm mmmmm!
This is Karma. She is the darker half of our guard dog sisters at the shop. My husband and his parents own a towing and auto repair business and the law states that either they have 24 hour manned surveillance or dogs. We chose dogs. A pair of Great Dane litter mates; Karma and Cuddles. Don’t laugh. They were named when I found them. Although it is funny when I have to say “bad Karma.”
The girls are just as happy running after bunnies as they are sleeping in a ray of sunshine. It makes me remember to slow down just watching them. They are so simple. Love them is all they ask. People aren’t much different.
Must try to remember that.
I really don’t know if these evil screeching creatures are everywhere or if we’re just lucky here in the heartland. If we are the only ones that get the pleasure of having their ear pierceing beautiful song as the background to our perfect summer evenings I cry Not Fair!
If you haven’t had the chance to experience being around one of these little demons let me sum up the experience. You’re having a great time enjoying the lovely August evening when you notice the quiet chirp of a cricket. It lends to the evening nicely. When quite suddenly the quiet chirp turns into a sound reminiscent to an angry bird. If the noise wasn’t enough to convince you that it is time to go inside you now must know that these things are the size of a large cockroach and fly blindly through the air. You haven’t experienced a Midwestern summer until you’ve been pelted with one of these bad boys!
If these aren’t specific to this part of the nation then you feel my pain and can appreciate my bruises. If they are only found here please feel free to have a visit! They are very lovely beasts!
